MONTHLY FLYER
Raw Carrot Cake Energy Bites
• 1 cup shredded carrot
• 1 cup Medjool dates (pitted)
• ½ cup walnuts or pecans
• ½ cup rolled oats
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ½ tsp vanilla
• Pinch salt
• ¼ cup shredded coconut (optional for rolling)
Instructions:
1. Pulse nuts and oats in a food processor to coarse meal.
2. Add dates, carrot, spices, vanilla, and salt. Blend until doughy.
3. Roll into 12 balls. Roll in coconut if desired.
4. Chill or freeze.
