• 1 cup Medjool dates (pitted, packed)
• ½ cup shredded unsweetened coconut + extra for rolling
• 1/3 cup pumpkin seeds
• 3 tbsp chia seeds
• ¼ cup almond butter
• ½ tsp vanilla extract
• Pinch sea salt
Instructions:
1. Soak dates in warm water for 5 minutes if dry; drain.
2. In a food processor, pulse pumpkin seeds until roughly chopped.
3. Add dates, coconut, chia, almond butter, vanilla, and salt. Blend until sticky and
uniform.
4. Roll into 12 balls. Roll in extra coconut.
5. Store in fridge up to 1 week or freeze up to 2 months.
