Creamy Spring Pea Mint Soup with Hemp Cream

 Soup Ingredients: 

  • 2 tbsp olive oil 

  • 1 leek or 1 onion, chopped 

  • 3 cups peas (fresh or frozen) 

  • 3-4 cups vegetable broth 

  • 4 tbsp fresh mint leaves (or 1/2 tsp dried) 

  • Salt & pepper 

Hemp Cream: 

  • 5 tbsp hemp seeds 

  • 3 tbsp water 

  • 1 tbsp lemon juice 

Instructions: 

  1. Sauté leek in olive oil for 5 mins. 

  1. Add peas and broth, simmer for 10 minutes. 

  1. Blend soup with mint and season. 

  1. Blend hemp seeds, water, and lemon juice for cream. 

  1. Swirl hemp cream into soup before serving.
