Creamy Spring Pea Mint Soup with Hemp Cream
Soup Ingredients:

2 tbsp olive oil

1 leek or 1 onion, chopped

3 cups peas (fresh or frozen)

3-4 cups vegetable broth

4 tbsp fresh mint leaves (or 1/2 tsp dried)

Salt & pepper
Hemp Cream:
-
5 tbsp hemp seeds
-
3 tbsp water
-
1 tbsp lemon juice
Instructions:

Sauté leek in olive oil for 5 mins.

Add peas and broth, simmer for 10 minutes.

Blend soup with mint and season.

Blend hemp seeds, water, and lemon juice for cream.

Swirl hemp cream into soup before serving.
