It tastes like a dessert, and full of gut goodness.
1 cup whole grain quinoa
1 ½ - 2 cups water
1 banana, mashed
2 medjool dates, diced small
½-1 cup plant milk of choice
1 tbsp cocoa powder
Pinch of sea salt
3 tbsp seed mix & 3 tbsp pumpkin seeds
Optional Toppings: nuts, dark chocolate chips, berries, fruits, coconut chips, cinnamon, ginger, cardamon
Cook quinoa: Bring 1 ½ - 2 cups water (depending on how soft you like your quinoa) to a boil in a saucepan. Add rinsed quinoa, boil and then simmer stirring frequently until water is absorbed. Add all other ingredients, simmer and mix well until porridge like. Serve in a bowl and top with your favourite toppings.
