Shakshuka, traditionally a North African dish, is typically comprised of spices, eggs and tomatoes, but here we've decided to mix things up a little... make it green and healthy with asparagus and beans.
2 tbsp olive oil
5 stalks asparagus cut into 1” pieces
½ cup green peas
½ cup green or yellow beans, cut in half
1 cup spinach, chopped
½ of a leek, chopped finely
2 cloves garlic, minced
1 tsp cumin powder
Salt, pepper
4 eggs (2 per serving)
Small handful dill, parsley or cilantro, chopped
pinch chili flakes (optional)
Steam asparagus until slightly softened (2-3 mins). Add the peas and beans and steam for another 2 minutes. Heat 2 tbsp olive oil in a large frying pan. Cook the leeks and garlic until soft, then add the cumin. Stir in the steamed veggies and cook for 1-2 minutes. Make holes for as many eggs as you want and crack an egg into each space. Cook gently until the eggs are done how you like them. Sprinkle with salt, pepper, herbs and chili flakes before serving.
