Blueberry Walnut Brain-Fuel Overnight Oats

A make-ahead breakfast that gives busy mornings a delicious head start

Back-to-school mornings don't have to mean choosing between a nourishing breakfast and getting everyone out the door on time. These Blueberry Walnut Brain-Fuel Overnight Oats can be prepared the night before, so breakfast is ready and waiting when the morning rush begins.

Creamy oats provide fiber-rich whole grains, while blueberries bring vibrant colour and plant compounds. Walnuts and chia seeds contribute healthy fats, including plant-based omega-3 ALA, and Greek yogurt adds protein to help make this breakfast satisfying and sustaining.

Ingredients

  • 2 cups rolled oats

  • 2 cups plain Greek yogurt or unsweetened dairy-free yogurt

  • 1½ cups unsweetened plant-based milk

  • 2 tbsp chia seeds

  • 1 tbsp ground flaxseed

  • 1 tsp cinnamon

  • 1 tsp pure vanilla extract

  • 1 cup fresh or frozen blueberries

  • ½ cup chopped walnuts

  • 1–2 tbsp maple syrup, optional

Directions

  1. In a large bowl, stir together the oats, yogurt, milk, chia seeds, ground flaxseed, cinnamon and vanilla.

  2. Gently fold in half of the blueberries and walnuts.

  3. Divide the mixture between four jars or containers.

  4. Refrigerate overnight, or for at least 4 hours.

  5. Top with the remaining blueberries and walnuts before serving.

Make It Your Own

Add sliced banana, other berries, a spoonful of almond or peanut butter, hemp hearts or a sprinkle of unsweetened coconut.

For a dairy-free version, use your favourite unsweetened plant-based yogurt and milk.
