No-Bake Brain Bites

A chewy, naturally sweet snack packed with nuts, seeds and coconut

The after-school hunger zone is real. By the time kids walk through the door, they may be tired, hungry and ready to eat everything in sight.

These No-Bake Brain Bites are an easy make-ahead option made with almond meal, coconut, dates, nut or seed butter and a variety of seeds. They're naturally sweetened with dates and maple syrup, while chia, flax, pumpkin seeds and almond meal add fibre, healthy fats and plant-based protein.

No oven required. No complicated ingredients. Just blend, roll and refrigerate.

Ingredients

  • 1 cup almond meal

  • ½ cup unsweetened shredded coconut

  • ½ cup soft pitted dates

  • ½ cup natural almond butter or sunflower seed butter

  • ¼ cup pumpkin seeds

  • 2 tbsp chia seeds

  • 2 tbsp ground flaxseed

  • 2 tbsp hemp hearts

  • 1 tbsp unsweetened cacao powder

  • 1 tsp cinnamon

  • 1 tsp pure vanilla extract

  • Pinch of sea salt

  • 1–2 tbsp water or milk, as needed

Directions

  1. Add the dates, almond butter, vanilla and 1 tablespoon of water to a food processor. Process until the dates are broken down and the mixture begins to become smooth.

  2. Add the almond meal, coconut, pumpkin seeds, chia seeds, ground flaxseed, hemp hearts, cacao, cinnamon and salt.

  3. Pulse until everything is well combined and the mixture holds together when pressed between your fingers.

  4. If the mixture seems too dry, add another tablespoon of water or milk and pulse again.

  5. Scoop out approximately 1 tablespoon of the mixture at a time and roll into balls.

  6. Place on a parchment-lined plate or container and refrigerate for at least 30 minutes to firm up.

Make Them Extra Special

Roll the finished bites in:

  • Unsweetened shredded coconut

  • Finely chopped pumpkin seeds

  • Hemp hearts

  • Cacao powder

  • A mixture of coconut and cacao

Nut-Free Lunchbox Version

Replace the almond meal with finely ground sunflower seeds or sunflower seed meal, and use sunflower seed butter instead of almond butter.

Brain Fuel Tip

These little bites are a great example of nutritional variety in action. Almonds, pumpkin seeds, chia, flax and hemp hearts each contribute their own combination of nutrients, including healthy fats, fibre, plant-based protein and minerals.

Rather than looking for one magical “brain food,” think about creating a diverse food landscape over the course of the day.
