2 cans of Safe Catch Elite Wild Tuna
1 tomato, chopped in large chunks
1 cup cherry tomatoes, halved
1 large cucumber, peeled and chopped into 1 inch squares
1 cup Kalamata olives, chopped in half
1 cup feta cheese, crumbled
2 tbsp rough chopped parsley
1 tsp salt
1 tsp garlic, finely chopped
1 tbsp fresh cracked pepper
2 tbsp olive oil
1 tbsp juice of Kalamata olives
Juice of half a lemon
Mix all ingredients together.
Serve over lettuce, in a pita with hummus, or by itself.
