Low Carb Pancakes or Waffles
Whether following a gluten free, low carb, keto, paleo or simply healthy lifestyle, these fluffy and tasty pancake or waffles will be a hit with the whole family!
2/3 cup Love My Buns Baking Mix
1/3 cup hot water
4 tbsp of melted coconut oil or butter
2 tsp cinnamon
1 tsp vanilla
4 tbsp coconut sugar
In a small bowl, mix the baking mix and water. In a separate bowl, whisk all other ingredients. Combine and mix both and allow to sit for 5 minutes. Warm a skillet or waffle maker on medium heat. Add coconut oil or butter to the pan. Whisk in 1 tbsp of apple cider vinegar or lemon juice and combine quickly. Spoon batter into skillet or waffle iron and cook until golden on both sides. Serve with nut butter, maple syrup, and fresh fruit.
