Makes 4 servings.
Ingredients:
12 ounces of Wild Atlantic salmon fillet, skin removed
2 cups broccoli florets
3 cups sweet potato
2 Tbsp. crushed walnuts
1 1/3 Tbsp. extra virgin olive oil, cold pressed
1 tsp. dill seed
½ fresh lemon
¼ cup reduced sodium soya sauce
Sea salt and pepper to taste
Preparation:
Brush salmon with olive oil and sprinkle on dill seed, crushed walnuts, sea salt, pepper and juice from ½ fresh lemon. Place in glass pan and broil for approximately 8 minutes.
Slice sweet potato and place in frying pan with broccoli and a small amount of water. Cover and cook for 10 minutes on medium high heat. Uncover, add soya sauce and cook for another 2 minutes. Serve with salmon.
