Vegan Eggplant & Tahini Burger

Enjoy the flavors of our Vegan Eggplant & Tahini Burger, featuring a delicious combination of grilled eggplant, savory olive tapenade, and a mouthwatering marinara sauce. The recipe includes step-by-step instructions on preparing the olive tapenade and assembling the burgers. Don't forget the pro tip of using eggplant slices instead of burger buns for a unique and delicious variation!

For the olive tapenade:

 1 ½ cups Kalamata olives

 1 small garlic clove

 1 tbsp capers

 2 tbsp olive oil

 

For the burgers:

 2 patties of Eggplant & Tahini VG Gourmet burger

 1 big eggplant

 2 tbsp olive oil

 2 tbsp vegan mayonnaise

 ½ cup arugula

 1 red onion

 1 cup marinara sauce

 salt and pepper to taste

 
For the tapenade:

Place all of the ingredients into a bowl, measuring cup or tall jar.  Pulse with an immersion blender until everything is finely chopped (you could also use a small food processor).

For the burgers:

Slice the eggplant into discs of medium thickness.  Brush the eggplants with oil and salt.  Grill in a pan until soft and set aside.  In the same pan grill the patties until golden.  Assemble the burgers by spreading vegan mayo onto the bottom bun, topping with arugula, the vegan patty, marinara sauce, red onion and eggplant. Spread the olive tapenade on the top bun, close it and enjoy!

Pro tip:

Use eggplant slices instead of burger buns for a unique and delicious variation!
