Veggie Herb Egg Scramble
A deeply nourishing breakfast that combines vibrant vegetables, fresh herbs, and medicinal mushrooms for added wellness support. This flavorful scramble is satisfying without feeling heavy, making it ideal for a detox reset. Earthy mushrooms, greens, and herbs create a delicious savory start to the day.
Serves 2
- 6 eggs
- 1 tbsp avocado oil
- 1 leek or 2 green onions, thinly sliced
- 1 zucchini, diced
- 1 cup medicinal mushrooms (shiitake, maitake, oyster), sliced
- 2 packed cups spinach
- ¼ cup chopped parsley
- 2 tbsp chopped dill
- 1 tbsp chopped chives
- ¼ tsp sea salt
- Black pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add leek, zucchini, and mushrooms. Sauté 5–7 minutes until softened and lightly golden.
- Add spinach and cook until wilted.
- Whisk eggs with salt and pepper, then pour into the pan.
- Gently stir until softly scrambled and cooked to your liking.
- Fold in parsley, dill, and chives.
- Finish with a squeeze of lemon if desired and serve warm.
