Veggie Herb Egg Scramble

A deeply nourishing breakfast that combines vibrant vegetables, fresh herbs, and medicinal mushrooms for added wellness support. This flavorful scramble is satisfying without feeling heavy, making it ideal for a detox reset. Earthy mushrooms, greens, and herbs create a delicious savory start to the day.

Serves 2

  • 6 eggs
  • 1 tbsp avocado oil
  • 1 leek or 2 green onions, thinly sliced
  • 1 zucchini, diced
  • 1 cup medicinal mushrooms (shiitake, maitake, oyster), sliced
  • 2 packed cups spinach
  • ¼ cup chopped parsley
  • 2 tbsp chopped dill
  • 1 tbsp chopped chives
  • ¼ tsp sea salt
  • Black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add leek, zucchini, and mushrooms. Sauté 5–7 minutes until softened and lightly golden.
  3. Add spinach and cook until wilted.
  4. Whisk eggs with salt and pepper, then pour into the pan.
  5. Gently stir until softly scrambled and cooked to your liking.
  6. Fold in parsley, dill, and chives.
  7. Finish with a squeeze of lemon if desired and serve warm.
