Seed Power Energy Bites

These no-bake energy bites are a simple, nutrient-dense snack made with wholesome ingredients that nourish and satisfy. Creamy SunButter and raw honey create the perfect naturally sweet base, while coconut, ground seeds, and pumpkin seeds add texture, healthy fats, fiber, and plant-based protein. With a hint of vanilla and sea salt, they’re deliciously balanced and easy to enjoy anytime. Perfect for busy mornings, lunchboxes, post-workout fuel, or an afternoon pick-me-up, these bites are a convenient way to keep steady energy on hand.  Makes 12

1/2 cup nut or seed butter (sunflower, pumpkin, almond, hazelnut)

3 tbsp raw honey

1/2 cup unsweetened shredded coconut

1/2 cup mixed ground seeds (flax, chia, hemp, sesame)

1/3 cup pumpkin seeds

1 teaspoon vanilla extract

1/2 tsp salt

Mix all ingredients in a bowl.  Wet hands and roll into bite sized balls.  Place on a glass or ceramic pan, dish or baking pan.  Place in the fridge for several hours.  Once firm, place in an airtight container and keep refrigerated.
