Wild Lemon-Herbed Salmon with Strawberry & Arugula Salad

Wild Lemon-Herbed Salmon with Strawberry & Arugula Salad 

Salmon Ingredients: 

  • 2 wild salmon fillets 

  • 2 tbsp olive oil 

  • Zest & juice of 1 lemon 

  • 1 garlic clove, minced 

  • 1 tbsp fresh thyme or parsley 

  • Salt & pepper 

Salad Ingredients: 

  • 2 cups baby arugula 

  • 1 cup sliced strawberries 

  • 1/2 avocado, cubed 

  • 1/2 cucumber, thinly sliced 

  • 2 tbsp walnuts, chopped 

  • 1/2 cup sprouts 

Lemon Basil Dressing: 

  • 2 tbsp lemon juice 

  • 1 tbsp apple cider vinegar 

  • 1 tsp maple syrup 

  • 2 tbsp olive oil 

  • 1 tbsp finely chopped fresh basil 

  • Salt & pepper 

Instructions: 

  1. Marinate salmon with olive oil, lemon juice/zest, garlic, herbs, salt & pepper for 15–20 minutes. 

  1. Bake at 375°F (190°C) for 15 minutes or until cooked through. 

  1. Toss salad ingredients together. Whisk dressing and drizzle over salad. 

  1. Serve salmon atop or alongside the salad.
