Wild Lemon-Herbed Salmon with Strawberry & Arugula Salad
Salmon Ingredients:
2 wild salmon fillets
2 tbsp olive oil
Zest & juice of 1 lemon
1 garlic clove, minced
1 tbsp fresh thyme or parsley
Salt & pepper
Salad Ingredients:
2 cups baby arugula
1 cup sliced strawberries
1/2 avocado, cubed
1/2 cucumber, thinly sliced
2 tbsp walnuts, chopped
1/2 cup sprouts
Lemon Basil Dressing:
2 tbsp lemon juice
1 tbsp apple cider vinegar
1 tsp maple syrup
2 tbsp olive oil
1 tbsp finely chopped fresh basil
Salt & pepper
Instructions:
Marinate salmon with olive oil, lemon juice/zest, garlic, herbs, salt & pepper for 15–20 minutes.
Bake at 375°F (190°C) for 15 minutes or until cooked through.
Toss salad ingredients together. Whisk dressing and drizzle over salad.
Serve salmon atop or alongside the salad.
