Coconut Overnight Oats
2 ½ cups coconut or almond milk
1 cup rolled oats
2 tbsp mixed seeds
2 tbsp pumpkin seeds
1-2 tbsp maple syrup
Dash of cinnamon
Toppings (optional): coconut flakes, coconut yogurt, nuts, kiwi, banana, berries, mango, papaya, pineapple, etc.
Divide all the ingredients between two mason jars or bowls with lids, shake and leave overnight in the fridge. Mix in more milk to serve if it’s too dense, and enjoy cold or warmed, topped with toasted coconut flakes, more seeds, cinnamon and fruit if you like.
