juice of 2 limes
1 tsp pure vanilla extract
1 tsp stevia or monk fruit powder (alternative option: 2 tbsp maple syrup or honey)
6-10 ice cubes to chill
Optional toppings: lime zest, shredded coconut, raspberries
Blend all ingredients. Chill and eat within 3 hours. Serve alone, with chia pudding or overnight oats.
