Roasting Pumpkin Seeds is usually what follows after the pumpkin carving. Pull out all the seeds and the gunky strings and then try your best to separate the seeds from the gunk. Then you are ready to create this tasty nutritious autumn snack.
1 1/2 cups of pumpkin seeds
2 tbsp of melted butter, ghee, Melt non-dairy spread or coconut oil
Optional: garlic powder, cayenne or cajun spices
Preheat oven to 300 degrees. Clean off seeds and rinse well (it's okay if a little pumpkin flesh or pulp remains) Toss seeds in a bowl with oil. Add a little salt and spices (if desired) Bake for approximately 45 minutes, stirring occasionally until crispy and golden.
