Raw Vegan Eggnog
This addictive eggnog is liquid bliss and it's nothing but healthful for you. Made with raw cashews or almonds with just the right sweetness, it is huge in flavour and delivers on the nutrition. It has no refined sugar, is dairy-free and egg-free!
2 cups of almond or cashew milk, chilled
½ cup canned coconut milk or cream, chilled
¼-⅓ cup raw almonds or cashews
6 medjool dates
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg
Optional: 1 ripe banana
Blend in a high speed blender or food processor. Serve immediately sprinkled with pinch of nutmeg. Note: Increasing the nuts or adding a banana will thicken the eggnog.
