Asparagus, Arugula & Strawberry Superfood Salad
This bright spring salad combines peppery arugula, tender asparagus, sweet strawberries, crunchy seeds, and a fresh homemade dressing. It’s rich in vitamin C, folate, fibre, and phytonutrients to support energy, detoxification, and overall wellness.
Ingredients
Salad
- 4 cups arugula
- 1 bunch asparagus, trimmed
- 1 cup sliced strawberries
- ¼ cup pumpkin seeds or chopped walnuts
- ¼ cup crumbled goat cheese or feta (optional)
- 2 tbsp fresh mint or basil, chopped
Dressing
- 3 tbsp ZenOlive olive oil
- 1 tbsp lemon juice
- 1 tsp maple syrup or honey
- 1 tsp Dijon mustard
- Sea salt and pepper to taste
Instructions
- Lightly steam or roast asparagus until just tender, then cool and chop into pieces.
- Add arugula, asparagus, strawberries, seeds, herbs, and cheese to a large bowl.
- Whisk dressing ingredients together.
- Drizzle over salad just before serving and toss gently.
