Asparagus, Arugula & Strawberry Superfood Salad

This bright spring salad combines peppery arugula, tender asparagus, sweet strawberries, crunchy seeds, and a fresh homemade dressing. It’s rich in vitamin C, folate, fibre, and phytonutrients to support energy, detoxification, and overall wellness.

Ingredients

Salad

  • 4 cups arugula
  • 1 bunch asparagus, trimmed
  • 1 cup sliced strawberries
  • ¼ cup pumpkin seeds or chopped walnuts
  • ¼ cup crumbled goat cheese or feta (optional)
  • 2 tbsp fresh mint or basil, chopped

Dressing

  • 3 tbsp ZenOlive olive oil
  • 1 tbsp lemon juice
  • 1 tsp maple syrup or honey
  • 1 tsp Dijon mustard
  • Sea salt and pepper to taste

Instructions

  1. Lightly steam or roast asparagus until just tender, then cool and chop into pieces.
  2. Add arugula, asparagus, strawberries, seeds, herbs, and cheese to a large bowl.
  3. Whisk dressing ingredients together.
  4. Drizzle over salad just before serving and toss gently.
