These vegan chocolate SunButter bites are truly decadent for any occasion, and make a perfect summer snack! They are made with a softly crunch crust, and are filled with nutritious goodness. Naturally sweetened and completely vegan, these bites are such a treat.

Servings: 9
Ingredients for Protein Balls:
1/2 cup oat flour
3 tbsp cocoa
1/2 cup SunButter
3 tbsp maple syrup or 3 dates, soaked & blended into puree, i.e. date paste
1 tsp vanilla extract
1 tsp cinnamon
2 tbsp brewed coffee
1/4 tsp salt
Ingredients for Crumb Coating:
1/3 cup SunButter
2 cup oat flour or 1 ยฝ cup almond flour
2 tbsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp salt
Directions for Protein Balls:
Line cookie sheet with parchment paper. Measure out ingredients.
Mix all protein ball ingredients in a bowl. Mix with a spoon or hand-held mixer.
Use a medium scoop to create scoops and put them on the cookie sheet.
Roll each round and smooth with your hands.
Combine all ingredients in a bowl, and mix until you have a small crumble. Roll each protein ball in the crumb, pressing lightly to coat.
