Blackberry Jam Oat Squares
These squares are a super nutritious & delicious snack the whole family will love. Oats have many health benefits including weight loss, lower blood sugar levels and a reduced risk of heart disease. This delicious snack can be served as breakfast, snacks or with a cup of your favourite afternoon tea or coffee.
¾ cup brown rice flour
¾ cup all purpose gluten free flour
2 cups rolled oats
1 cup chopped nuts or seeds (walnuts, pecans, pumpkin)
2 tsp baking powder
½ tsp salt
1 tbsp cinnamon
1 cup unsalted organic butter or coconut oil, softened
¾ cup cane or coconut sugar
1 egg, lightly beaten
1 cup blackberry or other natural fruit jam
Preheat oven to 350 degrees F.
Lightly grease 9 x 11 inch baking dish with coconut oil or butter.
Mix all ingredients except egg and jam into a food processor or bowl.
Set aside half of the mixture.
Blend egg into remaining mixture and press into the baking dish.
Bake until lightly golden (about 10 mins).
Remove from oven and spread jam over the surface.
Sprinkle top with remaining crumble.
Bake another 10 mins until golden.
Cool and cut into squares.
