The Baja Shrimp Caesar Salad recipe answers those requests with juicy tomatoes, crispy radish, dry rubbed shrimp, and a tangy drizzle of Caesar Dressing. Yum!

Ingredients:
Dry rub for shrimp:
1/2 tsp brown sugar
1/2 tsp salt
1/4 tsp smoked paprika
4 cracks fresh ground pepper
Salad Ingredients:
1 lb shrimp, peeled and deveined (tail on)
Avocado Oil Spray
4 cups lettuce mix
3/4 cup cherry tomatoes
1 small radish, cut into slices
4 tbsp Caesar Dressing
1/2 medium avocado, diced
1 cup corn chips, crushed
1/3 cup queso fresco or feta cheese
1/2 lime, cut into wedges
Instructions:
In a small bowl, mix the dry rub ingredients. Toss the peeled shrimp in the spices, then sauté with avocado oil over medium-high heat for 3-4 minutes on each side. Reserve in a warm place.
In a large bowl, add the lettuce mix, cherry tomatoes, radish slices and dressing. Sprinkle salt and pepper and gently toss the ingredients together.
Serve by plating the salad in an individual bowl. Top with shrimp, avocado, crushed corn chips, crumbled queso fresco and a lime wedge.
