Cabbage Slaw

Cabbage Slaw

4 cups red and green cabbage, shredded

2 carrots, shredded

1/2 red onion, diced

2 bulb of fennel, shredded

2 granny smith apples, shredded

1/2 bunch parsley or cilantro chopped


Dressing:

2 cloves garlic, minced

1/4 cup apple cider vinegar

1 tbsp honey

2 lemons juiced

1/4 cup olive oil

salt and pepper to taste

 

Alternative Dressing: Cilantro lime dressing

Garnish:  3/4 cup mixed seeds (pumpkin, sesame, sunflower, hemp)

Mix shredded veggies in a bowl and toss with dressing. Taste and adjust seasoning. Garnish with seeds. (If making in advance, wait to add the apple and dressing until the day of consumption).
