Autumn Overnight Oats (4 ways)

Base Ingredients 

1 cup old-fashioned oats 

2 tbsp mixed seeds 

2 cups unsweetened vanilla almond milk or other plant-based milk 

1 tsp vanilla extract 

1 tbsp maple syrup or honey 

1 tsp cinnamon powder 

optional: 1 tbsp almond or sunflower butter 

dash of sea salt  

 

For Pecan Pie Add: 

¼ cup chopped pecans 

 

For Apple Pie Add:  

¼-½ cup diced apple 

 

For Pumpkin Pie Add: 

6 tbsp pumpkin puree (not pumpkin pie filling) 

¼ tsp each nutmeg, cloves, allspice, and ginger 

 

For Berry Pie Add: 

½ cup mixed fresh or frozen berries 

 

In a mason jar or container with lid, combine base ingredients and any of the four additional ingredients should you desire. Secure with lid and shake well to mix.  Place oatmeal mixture in the refrigerator overnight or for at least 6 hours. Enjoy cold or heated on the stove.
