Key Lime Avocado Mousse

This vegan key lime mousse takes only minutes to make and is a true delight to the senses.  The combination of lime and coconut offers a fresh experience to the palette.  Enjoy this light, flavourful treat served on top of chia pudding for an extraordinary sensory experience!

Ingredients:
2 ripe avocados
1/2 cup coconut milk - full fat
juice of 2 limes
1 tsp pure vanilla extract
1 tsp stevia or monk fruit powder (alternative option: 2 tbsp maple syrup or honey)
6-10 ice cubes to chill

Optional toppings:  lime zest, shredded coconut, raspberries


Blend all ingredients. Chill and eat within 3 hours. Serve alone, with chia pudding or overnight oats.
