A compact red bean that’s mildly sweet, strengthening, balancing, and easy to digest. Aduki are adaptable to any cuisine, and highly regarded in macrobiotics. Also known as azuki and adzuki, they are one of Japan’s most popular beans, traditionally served on New Year’s to bring good fortune. In 1974 Eden traveled to Japan, purchased a shipment of aduki beans, and shipped them down the St. Lawrence River to Michigan. They were distributed as seed to Eden growers, initiating the Western Hemisphere cultivation of aduki. They are delicious in soups, dips, spreads, and desserts, great with winter squash, sweet corn, and other sweet vegetables, perfect with whole grain, especially brown rice. No salt added.
