Quinoa Black Bean Superfood Salad
Fresh, vibrant, and packed with texture, this protein-rich salad is ideal for meal prep lunches or a colorful side dish. Crisp vegetables, broccoli, fresh herbs, seeds, and a zesty lime dressing make every bite energizing and satisfying. It tastes even better after marinating, making it perfect for make-ahead meals.
Serves 4
- 2 cups cooked quinoa
- 1½ cups black beans, rinsed and drained
- 2 cups broccoli, finely chopped or lightly steamed and chopped
- 2 carrots, finely minced
- 2 celery stalks, finely minced
- 4 green onions, sliced
- 1 red or golden beet, grated
- ½ cup chopped cilantro
- ½ cup chopped parsley
- ½ cup pumpkin seeds
Lime Herb Dressing
- Juice of 2 limes
- ¼ cup olive oil
- 1-2 garlic clove, minced
- 1 tsp cumin
- ½ tsp sea salt
- Black pepper to taste
- Optional: 1 tsp maple syrup
Instructions
- If using raw broccoli, chop very finely. For a softer texture, lightly steam for 2 minutes and cool.
- Add quinoa, black beans, broccoli, vegetables, herbs, and pumpkin seeds to a large bowl.
- Whisk dressing ingredients together until well combined.
- Pour generously over salad and toss thoroughly.
- Chill for at least 20 minutes before serving for best flavor.
