Quinoa Black Bean Superfood Salad

Fresh, vibrant, and packed with texture, this protein-rich salad is ideal for meal prep lunches or a colorful side dish. Crisp vegetables, broccoli, fresh herbs, seeds, and a zesty lime dressing make every bite energizing and satisfying. It tastes even better after marinating, making it perfect for make-ahead meals.

Serves 4

  • 2 cups cooked quinoa
  • 1½ cups black beans, rinsed and drained
  • 2 cups broccoli, finely chopped or lightly steamed and chopped
  • 2 carrots, finely minced
  • 2 celery stalks, finely minced
  • 4 green onions, sliced
  • 1 red or golden beet, grated
  • ½ cup chopped cilantro
  • ½ cup chopped parsley
  • ½ cup pumpkin seeds

Lime Herb Dressing

  • Juice of 2 limes
  • ¼ cup olive oil
  • 1-2 garlic clove, minced
  • 1 tsp cumin
  • ½ tsp sea salt
  • Black pepper to taste
  • Optional: 1 tsp maple syrup

Instructions

  1. If using raw broccoli, chop very finely. For a softer texture, lightly steam for 2 minutes and cool.
  2. Add quinoa, black beans, broccoli, vegetables, herbs, and pumpkin seeds to a large bowl.
  3. Whisk dressing ingredients together until well combined.
  4. Pour generously over salad and toss thoroughly.
  5. Chill for at least 20 minutes before serving for best flavor.
