Golden Curry Lemon Lentil Soup

2 tbsp avocado oil
1 small onion diced
3 cloves garlic minced
1 carrot chopped
1 celery stalk chopped
1 tbsp curry powder
1 tsp cumin powder
1 cup red lentils
4 cups vegetable broth
1 tbsp lemon zest
juice of 1/2 large lemon
salt and pepper
Heat oil in a large pot over medium heat. Add onions and garlic and cook until soft. Add carrot, celery and sautee 4 minutes. Add spices. Stir for 1 minute until well mixed. Add broth, lentils, bring to a boil, then simmer. Add lemon, salt and pepper. Cook 30 minutes or until lentils are tender.
