Herbed Lentil Patties with Carrot-Parsnip Mash & Roasted Brussels Sprouts
Lentil Patties:

1.5 cups cooked green or brown lentils

1/2 cup oats

1/4 cup finely chopped onion

1 garlic clove, minced

1 tbsp chopped fresh parsley

1 tsp dried thyme

Salt and pepper

2 tbsp olive or avocado oil (for frying)
Mash:
-
4 large carrots, peeled and chopped
-
2 parsnips, peeled and chopped

1 medium sweet potato, peeled and chopped

1 tbsp olive oil

Salt and pepper
Brussels Sprouts:

3 cups Brussels sprouts, halved

2 tbsp olive oil
-
1 tbsp apple cider vinegar

2 tsp maple syrup

Salt and pepper
Steps:

Steam carrots and parsnips until soft, mash with oil, season.

Mix lentil patty ingredients and form into patties. Fry 3-4 min per side until golden.

Toss Brussels with oil, vinegar, maple, salt, and roast at 400°F for 20-25 minutes.

Serve patties with mash and roasted sprouts.
