Herbed Lentil Patties with Carrot-Parsnip Mash & Roasted Brussels Sprouts

 Lentil Patties: 

  • 1.5 cups cooked green or brown lentils 

  • 1/2 cup oats 

  • 1/4 cup finely chopped onion 

  • 1 garlic clove, minced 

  • 1 tbsp chopped fresh parsley 

  • 1 tsp dried thyme 

  • Salt and pepper 

  • 2 tbsp olive or avocado oil (for frying) 

Mash: 

  • 4 large carrots, peeled and chopped 

  • 2 parsnips, peeled and chopped 

  • 1 medium sweet potato, peeled and chopped 

  • 1 tbsp olive oil 

  • Salt and pepper 

Brussels Sprouts: 

  • 3 cups Brussels sprouts, halved 

  • 2 tbsp olive oil 

  • 1 tbsp apple cider vinegar 

  • 2 tsp maple syrup 

  • Salt and pepper 

Steps: 

  1. Steam carrots and parsnips until soft, mash with oil, season. 

  1. Mix lentil patty ingredients and form into patties. Fry 3-4 min per side until golden. 

  1. Toss Brussels with oil, vinegar, maple, salt, and roast at 400°F for 20-25 minutes. 

  1. Serve patties with mash and roasted sprouts.
