High-Protein Seedy Energy Bites (Raw, Flour-Free)

These seedy energy bites are rich in plant protein, fibre, and healthy fats to help sustain energy, stabilize blood sugar, and reduce mid-day crashes. Warming spices like cinnamon, cardamom, and ginger support digestion while adding a comforting flavour.

  • 1 cup soft Medjool dates (pitted)
  • ½ cup raw walnut pieces
  • 1/3 cup shredded unsweetened organic coconut
  • 3/4 cup mixed super seeds (chia, ground flax, hemp hearts, sesame seeds)
  • 1/4 cup pumpkin seeds
  • ¼ cup almond butter (or tahini or pumpkin seed butter)
  • 3 tbsp hemp hearts (additional for coating)
  • 1 tbsp melted coconut oil
  • 1 tsp cinnamon
  • ½ tsp ground cardamom
  • ½ tsp ground ginger
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt 
  • Optional: 1/4 cup rolled oats if you want a softer, more traditional texture
  • 1–2 tbsp warm water if needed

Instructions

  1. Add dates to a food processor and pulse until they form a sticky paste.

  2. Add walnuts and pumpkin seeds; pulse until finely chopped but still slightly textured.

  3. Add mixed seeds, shredded coconut, spices, vanilla, sea salt, nut/seed butter, and coconut oil.

  4. Process until the mixture comes together into a thick dough. Add warm water one tablespoon at a time if needed.

  5. Roll into bite-sized balls (about 1 tbsp each).  Tip, dip fingers in warm water to prevent batter from sticking

  6. Optional: roll bites in extra hemp seeds, sesame seeds, or coconut for coating.

To Store

  • Refrigerate in an airtight container up to 7–10 days.

  • Freeze up to 3 months for longer storage.

Protein Boost Options (Optional)

  • Add 2–3 tbsp unflavoured or vanilla plant protein powder.

  • Add collagen peptides (if desired) for extra protein without changing texture significantly.
