Arugula Salad With Manuka Honey Dressing
A light, zesty salad that's easy to throw together when entertaining on summer nights. Laura Paladino from Delicious AF Food created this recipe for us using our honey; she recommends topping it off with your favourite protein if you need a little more substance. Protein suggestions include tempeh, crispy tofu, grilled chicken, sautéed shrimp or grilled salmon!
1 10oz package arugula
1 cup blueberries
1 cup mango (thinly sliced)
1 cup shredded carrots
1/3 cup unsweetened coconut
1/3 cup shaved almonds
1/2 cup goat cheese crumble
1/4 cup extra virgin olive oil
3 tbsp balsamic vinegar
1 tbsp Mānuka Honey MGO30+
1 tbsp dijon mustard
1/4 tsp salt
1/8 tsp black pepper
To make the dressing add oil, balsamic vinegar, Mānuka honey, dijon mustard, salt and black pepper to a mason jar and shake, shake, shake until thoroughly combined.
Assemble the salad by grabbing a large bowl or serving platter and fill it with arugula.
Add the blueberries, mango, shredded carrots, unsweetened coconut, shaved almonds and creamy goat cheese crumble then drizzle on the dressing.
Give the salad a gentle mix and enjoy!
