Mediterranean Tuna & Greek Yogurt Wrap
Fresh, colourful and packed with protein, this Mediterranean-inspired wrap makes a satisfying lunch for picnics, road trips or afternoons at the cottage. Creamy Greek yogurt replaces mayonnaise for a lighter twist, while crisp vegetables and olives add plenty of flavour and crunch.
Ingredients
- 2 Carbonaut wraps, or wraps of choice
- 1 can Raincoast Tuna, drained
- ¼ cup Greek Yogurt
- 1 tsp Dijon mustard
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh dill or parsley
- ¼ cup diced cucumber
- ¼ cup halved cherry tomatoes
- 2 tbsp chopped Dumet Olives
- Handful of spinach or mixed greens
Directions
In a medium bowl, stir together the Greek yogurt, Dijon mustard and lemon juice. Fold in the tuna, cucumber, tomatoes, olives and fresh herbs. Divide the mixture between the wraps, top with spinach or mixed greens, roll tightly and slice in half. Serve with fresh berries or crunchy vegetables for a complete summer meal.
