Lentil & Cabbage Comfort Soup

Hearty, grounding, and rich in fiber, this mineral-dense soup supports detox pathways and stabilizes stress hormones through steady energy release and gut nourishment. 

Ingredients: 
1 cup dry brown lentils, rinsed well 
1/2 small red cabbage, shredded 
2 carrots, chopped 
2 celery stalks, chopped 
1 red onion, chopped 
1 tsp grated ginger 
1/2 tsp dried oregano 
1/2 tsp cumin 
½ tsp dried corriander 
5-6 cups vegetable or bone broth 
 2 tbsp fresh lemon or lime juice 
1 Tbsp olive oil 
Sea salt and pepper to taste 
 (Option:  Add shredded cooked chicken, or turkey for extra protein) 

 

Directions: 

  1. Heat oil in pot; sauté onion, carrots, and celery for 3–4 minutes. 

  1. Add spices, cabbage, and lentils; stir well. 

  1. Pour in broth; bring to boil, then simmer 25–30 minutes until lentils are soft. 

  1. Season to taste and serve warm. 

Storage: 
Keeps well in fridge for 5 days. Freezes beautifully up to 2 months.
