2 tbsp coconut or avocado oil
½ cup onions, chopped
½ cup leeks, chopped
½ cup celery, chopped
½ cup carrot, chopped
1 cup red skin potato, cut into 1 inch pieces
1 cup sweet potato or yam, cut into 1 inch pieces
1.5 cups yellow split peas or red lentils
6 cups vegetable or bone broth
1 tbsp each cumin, turmeric
Salt and black pepper
Heat oil in large pot. Sautee onion for 2 min. Add other veggies, cover and sauté stirring occasionally for another 5-10 min. Add broth, split peas, spices. Bring to boil. Simmer covered 40 min. Remove from heat and puree with a hand blender or regular blender. Serve.
