2 pears or apples halved lengthwise and cored
¼ cup melted coconut oil
¼ cup gluten free rolled oats
¼ cup nuts (pecans, walnuts or seeds)
1 tsp cinnamon + sprinkle
1 tbsp coconut sugar or maple syrup
pinch salt
Cut fruit in half lengthwise and remove core and seeds. Place in a baking dish, cut side up. Sprinkle with cinnamon. Melt coconut oil in a small saucepan over medium heat. Remove from heat. Whisk in sugar, stir in oats, nuts and cinnamon. Spoon mixture over fruit. Bake covered in a preheated oven at 350 degrees F for 25 mins. Uncover and bake for another 20 mins or until soft. Cool slightly and enjoy one half as a snack.
