Healthy Raspberry Acai Bars

Have you heard the good news? Fat. Is. Back. These Raspberry Coconut Freezer Bars are packed with healthy fats and contains ZERO artificial or refined sugar. Even though these bars are absolutely delicious, you won’t find yourself overeating them thanks to the high fat content from the coconut. Fats, unlike sugars and simple carbs, are extremely satiating. We know it’s really easy to keep going back to that box of cookies or that bag of chips, and this is because of the combination of unhealthy fats and simple carbs that they contain. Instead, we’re giving you a low carb, high fat delicious dessert that is sure to satisfy your sweet tooth without causing you to over-eat and over-indulge. Talk about a win-win! 

What you’ll need for the base:

  • 1 cup dates, pitted
  • 1 cup almonds
  • 3 tbsp coconut oil

What you’ll need for the filling:

  • 1 ½ cups cashews, soaked in boiling water for at least
    20 mins (drain)
  • ½ cup coconut oil, melted
  • ½ cup canned coconut milk, full fat (shaken)
  • ½ cup dates, soaked in boiling water for 2 mins (drain)
  • 1-2 tbsp hot water
  • 3 tbsp Acai Powder

To Prepare The Base:

  1. Line the bottom and the sides of a 8" x 4" baking pan with parchment or wax paper.

  2. In a food processor, chop 1 cup dates with almonds and 2 tbsp melted coconut oil.

  3. Press this mixture firmly into the bottom of the pan. Top with frozen raspberries

To Prepare The Filling:

  1. Blend the ½ cup of melted coconut oil, ½ cup canned coconut milk, ½ cup soaked dates, 1 ½ cup cashews and beet latte in a blender until smooth.

  2. Add 1 tbsp of hot water at a time to help the mixture blend.

  3. Pour over your base and top with crumbled frozen raspberries or toppings of choice.

  4. Allow to freeze for a minimum of one hour.

  5. Cut and enjoy!
