Gluten-Free Berry Bliss Chia Protein Pudding with VegiDay
Gluten-Free Berry Bliss Chia Protein Pudding
Makes 4-6 servings
Ingredients:
- 1 pint strawberries (16 oz), green tops removed
- 1½ cup Greek yogurt
- 1¼ cup milk of choice (we used unsweetened oat milk)
- 3 Tbsp maple syrup
- 1 scoop (43 g) VegiDay® All-in-One Balanced Plant Protein, Berry Bliss flavour
- ½ tsp vanilla
- Pinch of salt
- ½ cup frozen raspberries
- ½ cup chia seeds
- Fresh berries for topping
- Mint leaves for topping
Directions:
- Add all the ingredients except chia seeds and toppings to a food processor and blend until smooth.
- Transfer to a bowl and whisk in chia seeds.
- Let sit for 10 minutes, then whisk again.
- Refrigerate for at least 2 hours or overnight.
- Scoop into cups and add berries and mint as toppings.
