Chocolate Mint Truffles

The nice thing about these truffles is that instead of using whipping cream, milk chocolate, and oils, I used real whole foods from plants. The end result speaks for itself—stellar chocolate mint satisfaction and let me tell you, these truffles have been getting rave reviews for years! These soft and decadent truffles are always a big hit over the holiday season, especially when rolled in crushed candy canes! Don’t tell anyone they are are a whole food treat, they wouldn’t believe you anyway.

Ingredients:
1/4 cup raw walnuts
1/2 cup raw almonds
8-10 big soft dates eg. Medjool (make sure to remove the pits)
3 tablespoons hemp seeds (also called Hemp Hearts)
1/3 cup cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1/4 teaspoon sea salt

For Rolling:
1/4 cup cocoa
1/4 cup hemp seeds
1/4 cup shredded coconut
1/4 cup crushed candy canes

Directions:
Place all of the ingredients into a food processor or blender and process until you achieve desired texture (from smooth to slightly chunky). You may have to stop a few times and scrape down the sides.If using a high speed blender start with the nuts first for about 20 seconds before adding the remaining ingredients.

Once well combined place the truffle mix in a large bowl and use wet hands to create a large sticky ball of the mixture (if you used a food processor you may have to add one more tablespoon of water and you use your hands to make the mixture stick back together).

Using approx. 1 tablespoon of the mixture at a time roll the truffle mixture between your hands until you have a nice small ball formed. Roll the truffles in your choice of cocoa or hemp seeds or coconut or crushed candy canes* (try to find canes without high fructose corn syrup in your health food store)

TIP: To crush the candy canes place them between two hand towels and use a hammer to gently crush them. This might be the part I find the most fun!
