These energizing superfood truffles are so delicious, you would swear there is chocolatey fudge in them, but don’t be fooled! They are raw, vegan, gluten-free, all organic ooey gooey goodness!
1 Cup Cashew Nuts
2 Cups Pitted Dates
1/3 Cup Melted Cacao Butter
3 Tbsp. Pumpkin Seeds
1/4 Cup Coconut Palm Sugar
1/3 Cup Maca Powder
1/3 Cup Cacao Powder
3 Tbsp. Matcha Powder
3 Tbsp. Filtered Water
Add all ingredients to a food processor and blend until finely ground. Mixture should look thick and creamy, but with some texture because of the nuts and seeds.
Using an ice cream scooper or spoon, scoop out desired amount and round into balls. After all the balls are rounded, you can stop there OR you can roll the balls into toppings of your choice, such as Cacao Powder, coconut shavings and Matcha Powder.
Once all of your toppings are on, place truffles in an air-tight container and refrigerate for at least one hour. Then Bon Appétit!
