Roasted Beet, Arugula & Orange Salad

 

  • 3 medium beets, scrubbed 

  • 4 cups arugula 

  • 2 oranges, peeled and segmented 

  • 1/2 cup toasted walnuts 

  • 2 tbsp hemp seeds 

Dressing: 

  • 3 tbsp olive oil 

  • 1 tbsp fresh orange juice 

  • 1 tbsp apple cider vinegar 

  • 1 tsp Dijon mustard 

  • 1 tsp maple syrup 

  • Salt & pepper to taste 

Steps: 

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 40-45 minutes until tender. Cool, peel, and slice. 

  1. In a small bowl, whisk together dressing ingredients. 

  1. In a large salad bowl, combine arugula, beet slices, orange segments, toasted walnuts, and hemp seeds. 

  1. Drizzle with dressing, toss, and serve.
