Goodbye winter, hello spring! What a better way to celebrate the coming of spring than with a bowl of nutritious, delicious spring soup! Full of flavour and colour, topped with crunchy gluten free Smartbite croutons, this soup is impressive enough to serve to friends, yet casual enough to slurp solo. Soup's On!
2 tbsp coconute oil
Croutons:
Smartbite multigrain cakes
1 tbsp coconut oil
handful sunflower seeds
Heat large pan over medium heat. Add coconut oil, onion and pinch of salt and pepper. Cook for 3 minutes. Add garlic. Cook for another minute.
Add the zucchini, 1/2 tsp salt, 1/4 tsp pepper and cook for another 6 minutes. Add broth, bring to a boil and then simmer for 5 minutes.
Turn off the heat, add basil, avocado, juice of lemon, 1/2 tsp of salt and pinch of pepper.
Transfer in batches to a blender and blend or use a immersion blender to blend. Add more broth and salt and pepper if needed.
Croutons: Heat a small to medium pan over medium/high heat. Melt coconut oil, add crumbled multigrain cakes and a pinch of salt. Toast for 3 minutes. Add sunflower seeds. Toast another minute.
