People tend to think of wheat as a flour, but this staple grain is just as delicious in its whole form. Organic sprouted wheat berries have a soft, chewy texture (similar to barley) and mild nutty flavour. This whole grain is high in dietary fibre, B1 and B3 vitamins, and other minerals such as magnesium and phosphorous. We source organically grown wheat berries from the Canadian prairies.
These wheat berries have been through a slow soaking and sprouting period to aid in digestion, decrease their cook time and improve their texture. Sprouting also reduces bitterness (saponin) from the outer layer of the seed, which enhances their light, sweet, nutty flavour. Like other grains, they are cooked by simply boiling in water.
They are perfect for salads, grain bowls, soups, stews, side dishes and even risotto. They can be swapped 1:1 for unsprouted wheat berries, or as a substitute for rice or quinoa. Because of their subtle taste, they compliment everything from bold salad dressings to a light dusting of cinnamon and dried fruit.
