Roasted Almond Oil Hummus

Why buy ready-made hummus when this recipe is so easy, more delicious and hasn't any preservatives!


• ¾ cup almond oil
• 2 19-ounce cans chick peas
• 4 garlic cloves, chopped
• 3 Tbsp almonds
• ⅔ cup well-stirred tahini (you can substitute almond butter, and omit the almonds)
• ⅔ cup water
• 5 Tbsp fresh lemon juice
• 1 tsp salt
• Parsley sprigs for garnish
• Pita toasts



In a colander rinse and drain chick-peas. Puree all the ingredients in a food processor and refrigerate in a covered bowl. Recipe may be prepared up to this point 3 days ahead.

Serve hummus garnished with parsley sprigs and pita toasts.

Makes about 4 cups
