Spicy Roasted Chickpeas
1 can (15 oz) chickpeas, drained and rinsed
1 tablespoon extra virgin olive oil
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional, for heat)
Salt to taste
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the chickpeas dry with a towel to remove excess moisture.
In a bowl, toss the chickpeas with olive oil, smoked paprika, cumin, garlic powder, cayenne pepper (if using), and salt.
Spread the chickpeas in a single layer on the prepared baking sheet.
Roast for 25-30 minutes, shaking the pan halfway through, until chickpeas are crispy and golden brown. Let cool before serving.
