This rich, tart and creamy treat is packed with vitamin C and anti-aging properties. Just blend, pour, freeze and enjoy!
• 4 cups cashews
• 1 cup fresh lime juice
• ½ cup RAW agave syrup
• ½ cup liquid coconut oil
• 1 cup filtered water, as needed
Combine cashews, lime juice, agave syrup and coconut oil in a high-speed blender and blend until smooth, adding water as needed. Scoop mixture into a pie dish. Freeze until chilled (2 to 3 hours), cut into bars and serve. Will keep for weeks in the freezer.
Suggestion: If coconut oil is semi-solid, put container in warm water to melt it a little.
Optional: Try using coconut water instead of filtered water for a more tropical flavour.
