Baked Omelette

Serves 4

The great thing about this recipe is you can add any of your own ingredients!  Be creative!  Other options could include mushrooms, peppers, onion or even cheese!  This recipe is just a basic recipe but the more healthy ingredients you add, the better the omelette!

Ingredients:

  • 3/4 cup of graded cheese (use low fat)
  • 6 eggs
  • 1/4 cup of ham or cooked bacon (optional)
  • 1/3 cup of pure water
  • 3/4 cup of broccoli flowers
  • 1 to 2 cups of spinach
  • Sea salt & pepper to taste
  • Pinch of cayenne

Directions:

Place graded cheese at the bottom of a baking dish that is lightly oiled (or buttered). Place a layer of broccoli and then the spinach on top. Beat eggs, water, ham & seasoning and pour over the vegetables. Bake in a moderate oven (350F) for 30 to 40 minutes.
